Sweet potato n kale salad
Can’t go wrong with sweet potato and maple syrup
Ingredients for salad:
1/2 C quinoa
1-2 Roasted sweet potato
2 TBS dried cranberries
1/2 C cubed avocado
Kale
Ingredients for Maple dressing:
-1/4 C yogurt
-1/4 C olive oil
-1/4 C maple syrup
-1 TBS mustard
-1 TBS apple cider vinegar
-1 t.s salt
-1/4 t.s black pepper
Recipe:
Cut the sweet potato into cubes, drizzle with olive oil, salt and pepper
Spread on a baking tray
Bake for 35-45 minutes in 400F , 200C degree oven
Chop the kale leaves and drizzle with olive oil, add a dash of salt and massage the leaves to soften them
Cook the quinoa according to package instructions
Arrange all the ingredients in a bowl
